- 400g chicken thighs, boneless, skinless
- 100g unsweetened shredded coconut
- 50g panko breadcrumbs
- 5g salt
- 2g black pepper
- 1 large egg, beaten
- 30ml coconut milk
- 30ml neutral oil
- 200ml coconut cream
- 1 lime zest
- 30ml lime juice
- 5g grated ginger
- 5g honey
- 15ml soy sauce
- ยฝ small red chili, sliced (optional)
- 15ml toasted coconut flakes
- 5g cilantro, chopped (optional)

Instructions
- Prep Oven & Pan: Preheat oven to 200ยฐC (400ยฐF) and line a baking sheet.
- Combine Coating: Mix coconut, panko, salt, and pepper in a bowl.
- Make Egg Wash: Whisk egg with coconut milk.
- Coat Chicken: Dry chicken, dip in egg, then press into coconut mixture.
- Sear Chicken: Sear in hot oil for 2-3 minutes per side.
- Bake Chicken: Bake for 12-15 minutes, until cooked through.
- Make Sauce: Simmer coconut cream, lime zest, juice, ginger, honey, soy sauce, and chili.
- Simmer Sauce: Simmer sauce for 5-7 minutes, until thickened.
- Plate & Garnish: Drizzle chicken with sauce, sprinkle with coconut flakes and cilantro.
Notes
Pat the chicken dry for a crispier crust. Press the coconut mixture firmly onto the chicken. Don’t overcrowd the pan when searing.
