Ingredients
- 500g chicken breasts, diced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 0.5 tsp salt (plus 0.25 tsp)
- 0.5 tsp black pepper
- 150g onion, chopped
- 120g red bell pepper, diced
- 240ml black beans, drained
- 240ml frozen corn, thawed
- 8 small (20cm) flour tortillas, strips
- 170g cheddar cheese, shredded
- 240ml Monterey Jack cheese, shredded
- 30g unsalted butter
- 16g all-purpose flour
- 360ml whole milk
- 120ml heavy cream
- 30ml chipotle puree
- 15ml lime juice
- 5g lime zest
- 8g pepitas, toasted
- 8g cilantro, chopped

Instructions
- Prepare Chicken: Season diced chicken with cumin, paprika, salt, pepper, and 1 tbsp olive oil.
- Cook Chicken: Sautรฉ seasoned chicken in 1 tbsp olive oil until cooked through.
- Sautรฉ Vegetables: Cook chopped onion and bell pepper until softened.
- Combine Filling: Mix chicken, vegetables, beans, corn, and half the cheese.
- Make Sauce: Melt butter, whisk in flour, then gradually add milk and cream until thickened.
- Flavor Sauce: Stir in chipotle puree, lime juice, zest, and salt.
- Assemble Casserole: Layer sauce, tortillas, chicken mixture, and cheese in a dish. Repeat layers.
- Bake Casserole: Bake at 175ยฐC (350ยฐF) for 20-25 minutes until bubbly.
- Rest & Garnish: Let rest for 5 minutes, garnish with pepitas and cilantro.
