  • 240ml black beans, drained
  • 240ml frozen corn, thawed
  • 8 small (20cm) flour tortillas, strips
  • 170g cheddar cheese, shredded
  • 240ml Monterey Jack cheese, shredded
  • 30g unsalted butter
  • 16g all-purpose flour
  • 360ml whole milk
  • 120ml heavy cream
  • 30ml chipotle puree
  • 15ml lime juice
  • 5g lime zest
  • 8g pepitas, toasted
  • 8g cilantro, chopped

Instructions

  1. Prepare Chicken: Season diced chicken with cumin, paprika, salt, pepper, and 1 tbsp olive oil.
  2. Cook Chicken: Sautรฉ seasoned chicken in 1 tbsp olive oil until cooked through.
  3. Sautรฉ Vegetables: Cook chopped onion and bell pepper until softened.
  4. Combine Filling: Mix chicken, vegetables, beans, corn, and half the cheese.
  5. Make Sauce: Melt butter, whisk in flour, then gradually add milk and cream until thickened.
