Description
This Coconut Lime Chicken features tender chicken breasts filled with a creamy coconut-lime mixture, glazed to perfection, and garnished with toasted coconut. It’s a delightful blend of sweet, tangy, and savory flavors perfect for any occasion.
Ingredients
- 600g chicken breasts, halal recommended
- 1.5 tsp sea salt
- 0.5 tsp black pepper
- 30 ml olive oil
- 100g cream cheese, softened, halal recommended
- 50g shredded coconut, toasted
- 1 lime zest (from 1 lime + 1 Tbsp)
- 15 ml lime juice
- 1 Tbsp cilantro, chopped
- 0.5 tsp ground cumin
- 100 ml coconut milk
- 30 ml honey
- 15 ml coconut oil
- 2 Tbsp coconut flakes, toasted
- 0.5 tsp extra lime zest
- Cilantro leaves, for garnish

Instructions
- Preheat & Prep: Preheat oven to 200ยฐC (400ยฐF) and line a baking sheet.
- Make Filling: Combine cream cheese, coconut, lime zest, juice, cilantro, and cumin.
- Prepare Chicken: Season chicken, slice horizontal pockets.
- Stuff Chicken: Fill pockets with filling, secure with toothpicks.
- Sear Chicken: Sear chicken in olive oil for 2-3 minutes per side.
- Bake Chicken: Bake for 20-25 minutes, until cooked through.
- Make Glaze: Simmer coconut milk, honey, lime juice, zest, and coconut oil.
- Glaze & Bake: Brush glaze over chicken, bake 5 more minutes.
- Rest & Serve: Rest for 5 minutes, remove toothpicks.
- Plate & Garnish: Plate, drizzle with glaze, and garnish.
Notes
For best results, use softened cream cheese and fresh lime juice. Toasting the coconut enhances its flavor. Ensure chicken is cooked to an internal temperature of 75ยฐC (165ยฐF).
