  • 1.5 tsp sea salt
  • 0.5 tsp black pepper
  • 30 ml olive oil
  • 100g cream cheese, softened, halal recommended
  • 50g shredded coconut, toasted
  • 1 lime zest (from 1 lime + 1 Tbsp)
  • 15 ml lime juice
  • 1 Tbsp cilantro, chopped
  • 0.5 tsp ground cumin
  • 100 ml coconut milk
  • 30 ml honey
  • 15 ml coconut oil
  • 2 Tbsp coconut flakes, toasted
  • 0.5 tsp extra lime zest
  • Cilantro leaves, for garnish

Instructions

  1. Preheat & Prep: Preheat oven to 200ยฐC (400ยฐF) and line a baking sheet.
  2. Make Filling: Combine cream cheese, coconut, lime zest, juice, cilantro, and cumin.
  3. Prepare Chicken: Season chicken, slice horizontal pockets.
  4. Stuff Chicken: Fill pockets with filling, secure with toothpicks.
  5. Sear Chicken: Sear chicken in olive oil for 2-3 minutes per side.
  6. Bake Chicken: Bake for 20-25 minutes, until cooked through.
  7. Make Glaze: Simmer coconut milk, honey, lime juice, zest, and coconut oil.
  8. Glaze & Bake: Brush glaze over chicken, bake 5 more minutes.
  9. Rest & Serve: Rest for 5 minutes, remove toothpicks.
