- 21oz chicken breasts, skinless, boneless
- 1 Tbsp (15ml) olive oil
- 2 Tbsp (30ml) honey, wildflower or clover
- 1 tsp (โ1 tsp) garlic, minced
- 1 Tbsp (15g / ยฝ oz) ginger, grated fresh
- 1 Tbsp (18g / ยฝ oz) white miso paste
- 1 Tbsp (15ml) soy sauce, low-sodium
- 1 tsp (5ml) rice vinegar
- ยผ tsp (ยฝ tsp / 2g) chili flakes (optional)
- ยผ tsp (1 tsp / 3g) toasted sesame seeds
- ยฝ tsp (โ1g) lime zest, from 1 lime

Instructions
- Prepare Chicken: Pat chicken dry and season lightly with salt and pepper.
- Make Miso Glaze: Whisk together honey, garlic, ginger, miso, soy sauce, vinegar, and chili flakes.
- Sear Chicken: Sear chicken in olive oil for 4-5 minutes per side until golden brown.
- Glaze and Cook: Reduce heat, pour glaze over chicken, and baste for 3-4 minutes until cooked through (165ยฐF).
- Rest and Slice: Let chicken rest for 5 minutes before slicing diagonally.
- Garnish and Serve: Drizzle with remaining glaze, sprinkle with sesame seeds and lime zest.
Notes
For a deeper flavor, marinate the chicken in the glaze for up to overnight. Using a cast iron skillet ensures even heat distribution during searing.
