Description
This Chicken Ranch Casserole features tender chicken, pasta, and a flavorful garlic-rosemary cream sauce, topped with a crispy breadcrumb mixture. It’s a comforting and easy-to-make weeknight dinner the whole family will enjoy.
Ingredients
- 500g (1lb 4oz) Boneless, Skinless Chicken Breasts, cubed
- 250g (9oz) Short Pasta (Penne or Rotini)
- 200ml (ยพ cup) Ranch Dressing (Halal-Certified)
- 150ml (ยฝ cup) Heavy Cream
- 1 tbsp (15ml) Olive Oil
- 2 Garlic Cloves, minced
- 1 tsp (5ml) Fresh Rosemary, chopped
- 50g (ยฝ cup) Cheddar Cheese, grated
- 50g (ยฝ cup) Mozzarella Cheese, grated
- 30g (ยผ cup) Panko Breadcrumbs
- 30g (ยผ cup) Parmesan Cheese, grated
- ยฝ tsp (2.5ml) Sea Salt
- ยผ tsp (1.25ml) Black Pepper
- 2 tbsp (30ml) Fresh Chives, chopped

Instructions
- Preheat & Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a baking dish.
- Cook Pasta: Boil pasta until *al dente*, drain, and set aside.
- Sautรฉ Chicken: Sautรฉ cubed chicken with salt and pepper until cooked through.
- Infuse Garlic & Rosemary: Sautรฉ garlic and rosemary in olive oil until fragrant.
- Make Cream Sauce: Simmer heavy cream with garlic-rosemary mixture until slightly thickened.
- Combine Ingredients: Mix pasta, chicken, ranch, cheeses, and cream sauce.
- Assemble Casserole: Spread mixture in dish, swirl with remaining cream sauce.
- Prepare Topping: Combine breadcrumbs, Parmesan, and remaining cheeses.
- Bake: Bake for 25-30 minutes until golden brown and bubbly.
- Rest & Serve: Rest for 5 minutes, garnish with chives, and serve.
Notes
For best results, use fresh rosemary and don’t overcook the pasta. Feel free to experiment with different cheese varieties.
