  • 5g cilantro, chopped (optional)

Instructions

  1. Prep Oven & Pan: Preheat oven to 200ยฐC (400ยฐF) and line a baking sheet.
  2. Combine Coating: Mix coconut, panko, salt, and pepper in a bowl.
  3. Make Egg Wash: Whisk egg with coconut milk.
  4. Coat Chicken: Dry chicken, dip in egg, then press into coconut mixture.
  5. Sear Chicken: Sear in hot oil for 2-3 minutes per side.
  6. Bake Chicken: Bake for 12-15 minutes, until cooked through.
  7. Make Sauce: Simmer coconut cream, lime zest, juice, ginger, honey, soy sauce, and chili.
