  • 30 g granulated sugar

  • 45 g shelled pistachios, finely crushed (30g for coating, 15g for garnish)

Instructions

  1. Prep Oven and Baking Sheet: Preheat oven to 150ยฐC / 300ยฐF. Line a large baking sheet with parchment paper to prevent sticking.
  2. Prepare Honey Glaze: In a small saucepan over medium-low heat, melt honey, butter, sugar, and salt. Stir continuously until the sugar dissolves completely. Remove from heat and stir in the ground cardamom and orange blossom water.
  3. Coat Nuts: Combine the raw cashews and 30g of the crushed pistachios in a large mixing bowl. Pour the warm honey glaze over the nuts and toss thoroughly with a spatula until everything is evenly coated.
  4. Bake and Stir: Spread the coated nuts in a single layer on the prepared baking sheet. Bake for 20-25 minutes, stirring gently every 7-8 minutes to ensure even browning and prevent scorching.
  5. Cool Completely: Remove the baking sheet from the oven and transfer the hot cashews to a fresh piece of parchment paper to cool fully. Break apart any clumps as they set.
  6. Garnish and Serve: Once completely cooled, garnish the honey roasted cashews with the remaining 15g of crushed pistachios and serve.
