  • 2.5g (0.5 tsp) Black Pepper
  • 30g (2 Tbsp) Unsalted Butter
  • 15g (1 Tbsp) White Miso Paste
  • 5ml (1 tsp) Yuzu Juice (or Lemon Juice)
  • 5ml (1 tsp) Soy Sauce
  • 5g (1 tsp) Honey
  • 2.5g (0.5 tsp) Fresh Ginger
  • 10g (1 Tbsp) Toasted Sesame Seeds
  • 15g (2 Tbsp) Green Onions, sliced
  • Pinch of Shichimi Togarashi (optional)

Instructions

  1. Boil Potatoes: Boil potatoes until tender, then mash smoothly.
  2. Combine Dough: Mix mashed potatoes with flour, egg (if using), water, salt, and pepper.
  3. Knead Dough: Knead for 5-7 minutes until a cohesive dough forms.
  4. Shape Discs: Divide dough into 8 pieces and shape into flat discs.
  5. First Fry: Fry discs for 3-4 minutes per side until crisp.
  6. Make Glaze: Melt butter and whisk in miso, yuzu, soy sauce, honey, and ginger.
  7. Glaze & Second Fry: Brush mochi with glaze and fry for 30 seconds per side.
  8. Garnish & Serve: Sprinkle with sesame seeds and green onions; serve immediately.
