Ingredients
- 300g (10oz) Chicken Thighs: cut into bite-sized pieces
- 200g (1 cup) Jasmine Rice: rinsed thoroughly
- 150g (1 cup) Pineapple Chunks: fresh is best
- 1 Medium Onion: finely diced
- 2 Cloves Garlic: minced
- 15ml (1 tbsp) Vegetable Oil
- 5g (1 tsp) Ginger: grated
- 5g (1 tsp) Cumin: ground
- 2.5g (ยฝ tsp) Smoked Paprika
- 480ml (2 cups) Chicken Broth: low-sodium, halal
- 240ml (1 cup) Coconut Milk: full-fat
- 1 Lime: zest and 30ml (2 tbsp) juice
- 2g Cornstarch: mixed with 1 tbsp Water
- Salt and Pepper: to taste
- 30g (2 tbsp) Coconut Flakes: toasted
- Cilantro Leaves: for garnish

Instructions
- Sautรฉ Aromatics: Heat oil, sautรฉ onion until translucent (3-4 minutes).
- Bloom Spices: Add garlic, ginger, cumin, paprika; cook 30 seconds.
- Brown Chicken: Add chicken, season, and brown (5 minutes).
- Toast Rice: Stir in rice, toast lightly (2 minutes).
- Simmer Rice: Add broth, boil, reduce heat, cover, simmer (15 minutes).
- Add Pineapple: Add pineapple, cover, cook until tender (5-7 minutes).
- Make Cream: Combine coconut milk, lime zest, juice, cornstarch slurry; whisk until thickened (3-4 minutes).
- Combine & Rest: Fold in half of the cream, rest covered (5 minutes).
- Serve & Garnish: Serve with remaining cream, coconut flakes, and cilantro.
Notes
For extra tropical flavor, use coconut oil. Don’t lift the lid while simmering the rice to ensure even cooking.
