Ingredients

  • 300g (10oz) Chicken Thighs: cut into bite-sized pieces
  • 200g (1 cup) Jasmine Rice: rinsed thoroughly
  • 150g (1 cup) Pineapple Chunks: fresh is best
  • 1 Medium Onion: finely diced
  • 2 Cloves Garlic: minced
  • 15ml (1 tbsp) Vegetable Oil
  • 5g (1 tsp) Ginger: grated
  • 5g (1 tsp) Cumin: ground
  • 2.5g (ยฝ tsp) Smoked Paprika
  • 480ml (2 cups) Chicken Broth: low-sodium, halal
  • 240ml (1 cup) Coconut Milk: full-fat
  • 1 Lime: zest and 30ml (2 tbsp) juice
  • 2g Cornstarch: mixed with 1 tbsp Water
  • Salt and Pepper: to taste
  • 30g (2 tbsp) Coconut Flakes: toasted
  • Cilantro Leaves: for garnish

Instructions

  1. Sautรฉ Aromatics: Heat oil, sautรฉ onion until translucent (3-4 minutes).
  2. Bloom Spices: Add garlic, ginger, cumin, paprika; cook 30 seconds.
  3. Brown Chicken: Add chicken, season, and brown (5 minutes).
  4. Toast Rice: Stir in rice, toast lightly (2 minutes).
  5. Simmer Rice: Add broth, boil, reduce heat, cover, simmer (15 minutes).
  6. Add Pineapple: Add pineapple, cover, cook until tender (5-7 minutes).
  7. Make Cream: Combine coconut milk, lime zest, juice, cornstarch slurry; whisk until thickened (3-4 minutes).
  8. Combine & Rest: Fold in half of the cream, rest covered (5 minutes).
  9. Serve & Garnish: Serve with remaining cream, coconut flakes, and cilantro.

Notes

For extra tropical flavor, use coconut oil. Don’t lift the lid while simmering the rice to ensure even cooking.
