Ingredients

- 2 tbsp (30ml) olive oil
- 1 tsp (5g) smoked paprika, plus extra for dusting
- 1 tsp (5g) ground cumin
- 1 tsp (5g) garlic powder
- Salt and pepper to taste
- 1 (โ150g / 5oz) medium onion, thinly sliced
- 2 garlic cloves, minced
- 1 tbsp (15ml) honey
- 100g (3.5oz) shredded sharp cheddar cheese
- 1 tsp (5g) chipotle powder or 1 minced chipotle pepper
- 2 tbsp (30ml) heavy cream or plant-based cream
- Fresh cilantro leaves for garnish

Instructions
- Prepare Chicken: Pat chicken thighs dry.
- Make Spice Rub: Whisk olive oil, paprika, cumin, garlic powder, salt, and pepper.
- Season Chicken: Rub spice mixture on chicken.
- Initial Roast: Roast chicken skin-side up for 20 minutes.
- Caramelize Onions: Sautรฉ onions until caramelized (8 minutes).
- Add Garlic & Honey: Stir in garlic and honey during last minute.
- Create Chipotle Sauce: Add chipotle and cream; simmer for 2 minutes.
- Melt Cheese: Fold in cheddar until smooth.
- Sauce Chicken: Spoon sauce over chicken.
